Carob Fudge
Ingredients
2 tablespoons of raw, fresh carob powder
1 cup dates
1 cup hulled hempseed
5 drops peppermint ( we use Young Living Essential Oils)
Method

Method
- Place the dates, carob powder and hempseed in a food processor and process till a type of dough is formed. The dates will collect into a dough sized lump in the processor. When it does that, it's perfect. (Dates can be chopped by hand if you don't have a food processor but it will turn out more like a slice than like fudge).
- The longer the mixture is processed, the more fudge-like it becomes.
- Spoon the mixture into glass trays.
- Cut the fudge into slices.
- Store in the refrigerator until you want to eat them.
- Serve to eat by itself or with real fruit and homemade banana ice-cream and a sprig of mint.
- Carob Fudge keeps quite well in the fridge, unless someone raids them. They are very yummy, nutritious and they don't give me migraines that chocolate causes. Happy eating!
