Carob Fudge 

Ingredients
2 tablespoons of raw, fresh carob powder
1 cup dates
1 cup hulled hempseed
5 drops peppermint ( we use Young Living Essential Oils)

Method
  1. Place the dates, carob powder and hempseed in a food processor and process till a type of dough is formed.  The dates will collect into a dough sized lump in the processor. When it does that, it's perfect.  (Dates can be chopped by hand if you don't have a food processor but it will turn out more like a slice than like fudge).
  2. The longer the mixture is processed, the more fudge-like it becomes.
  3. Spoon the mixture into glass trays.
  4. Cut the fudge into slices.
  5. Store in the refrigerator until you want to eat them.
  6. Serve to eat by itself or with real fruit and homemade banana ice-cream and a sprig of mint.
  7. Carob Fudge keeps quite well in the fridge, unless someone raids them.  They are very yummy, nutritious and they don't give me migraines that chocolate causes.  Happy eating!
