Pawpaw Jelly

Ingredients
5 medium sized, fresh pawpaws
1/2 cup fresh lemon juice
1/4 cup chia seeds

Method
  1. Line the dehydrator trays with grease proof paper or plastic sheets. 
  2. Peel pawpaws or scoop the flesh out of the skins into a large mixing bowl and then place the fruit pulp into a food processor.  (Using a large bowl helps prevents pawpaw juice from dripping onto the bench).
  3. Juice the fresh lemons and add the juice to the food processor.
  4. Place pawpaws and lemon juice into a food processor and mix until the mixture is mushy or liquified.
  5. Add the chia seeds and stir well to avoid clumping.
  6. Spoon the mixture into dessert bowls or into a storage bowl and refrigerate.
  7. When cool, serve with homemade yoghurt or nut/seed cream or alternatively, spread onto homemade crepes as in the photots.
